JELLY SQUARES 
4 envelopes gelatin
1 cup cold water
4 cups sugar
l/4 teaspoon salt
l 1/2 cups boiling water
1 teaspoon cinnamon extract (optional)
1/2 teaspoon peppermint extract
Red (optional) and green coloring

Soften gelatin in cold water. Bring sugar, salt and boiling water together to boiling point, add first mixture, stir until gelatin is dissolved, then boil slowly for 15 minutes.

Divide into two portions - to one add red coloring and cinnamon extract (optional), to the other green coloring and peppermint extract. water) and let stand at least 12 hours. Turn onto board lightly covered with powdered sugar, cut into cubes with sharp knife and roll in powdered sugar.

This is Exactly what I was looking for. Wanted a non-fruit flavored gelatin for a day of "clear liquid" dieting for a procedure the next day. It was Really good.
