CRANBERRY-NUT BREAD | |
2 tbsp. butter 1 c. sugar 1 egg 2 c. flour 1 1/2 tsp. baking powder 1/2 tsp. salt 1/2 c. orange juice 1 tsp. baking soda 2 tsp. boiling water 1 c. cranberries, sliced 1/2 c. chopped walnuts Cream butter and sugar; add egg. Sift flour, baking powder and salt; add alternately with orange juice. Mix soda and water; add. Gently stir in cranberries and nuts. Bake in 4x8x2 1/2 inch loaf pan at 325 degrees for 1 hour. If glass pan is used, bake at 300 degrees. Yield: 1 loaf. |
