APRICOT-ALMOND BREAD 
1 egg
2/3 c. sugar
2 tbsp. oil
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 c. orange juice
1/2 c. water
1/2 c. dried apricots, finely chopped
1 c. sliced almonds

Heat oven to 350 degrees. Grease and flour bottom only of 8"x4" or 9"x5" loaf pan. In large bowl, beat egg until light and fluffy. Add sugar and oil; mix well. Blend flour, baking powder, salt and soda. Add flour mixture alternately with orange juice and water, beginning and ending with dry ingredients. Blend well after each addition; stir in apricots and nuts. Pour into prepared pan. Bake at 350 degrees for 55 to 65 minutes or until toothpick in center comes out clean. Cool 15 minutes; remove from pan. 1 loaf.
