CARROTS 'N ORANGE SAUCE 
1 lb. carrots
4 tsp. butter
4 tbsp. fresh orange juice
2 tbsp. brown sugar
1/2 tsp. cinnamon
2 tbsp. chopped fresh parsley
1/2 tsp. salt (optional)

Wash and pare carrots. Cut into 1/2 x 3 inch strips. Place in 1 1/2 quart shallow baking dish. Dot with butter. Mix together orange juice, brown sugar, cinnamon and salt; pour over carrots. Cover loosely with foil and bake in 350 degree oven for 25 minutes.

Remove foil and bake 20 minutes longer or until carrots are tender, stirring occasionally. Sprinkle with parsley. Makes 4 servings.
