CARROTS WITH PINEAPPLE SAUCE 
3 c. sliced carrots
3/4 c. unsweetened pineapple juice
1 tbsp. cornstarch
1 tbsp. sugar
1/4 tsp. salt
1/4 c. water
1 tbsp. butter

Place carrots and pineapple juice in pressure cooker.

Cover, set control and cook for 3 minutes after control jiggles. Reduce pressure instantly. Mix cornstarch, sugar, salt and water together. Add and cook until clear and thickened, stirring constantly. Stir in butter.
