2 c. mashed sweet potatoes
1/2 tsp. salt
1/2 c. brown sugar
4 tbsp. butter
4 slices pineapple
4 marshmallows
4 maraschino cherries

Combine potatoes, salt, sugar and 3 tablespoons butter in mixing bowl and beat until light and fluffy. Place pineapple on baking sheet; dot with remaining butter. Place potatoes on pineapple for individual servings. Top each with marshmallow and cherry. Bake in hot oven, 400 degrees, until heated through, about 10 minutes. Serves 4.
