2 c. cooked mashed sweet potatoes
1/2 tsp. salt
2 tbsp. melted butter
1/2 c. sugar
2 eggs, beaten
3 tbsp. milk
8 pineapple rings

Combine all ingredients, except pineapple. Place pineapple slices on greased cookie sheet. Place mound of potato mixture on each slice. Bake at 350 degrees for 20-30 minutes. If desired top with marshmallows and bake 5 minutes longer.
