PERSIMMON PUDDING 
1 c. cream
2 c. sugar
2 eggs
2 tsp. baking powder
1/4 c. melted butter
1 c. buttermilk
2 c. persimmon pulp
1 1/2 c. flour
1 tsp. baking soda
dash of cinnamon

Beat eggs well. Add sugar and pulp. Dissolve soda in buttermilk. Sift together flour, baking powder and cinnamon; stir into first mixture alternately with buttermilk and cream. Add butter last.

Pour into 9 x 13-inch pan, brushed with melted butter.

Bake at 325°F, about 1 hour.
