PINEAPPLE - MINT JELLY 
3 1/2 c. sugar
2 1/4 c. unsweetened pineapple juice
3/4 c. water
1 box powdered fruit pectin
Yellow or green food coloring
1/4 to 1/2 tsp. spearmint extract

In large sauce pan, mix pineapple juice and water. Add fruit pectin, mixing well. Stir in a few drops yellow or green coloring. Bring mixture to a hard boil, stirring. Stir in sugar. Bring to a full rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Add flavoring. Skim off foam with metal spoon. Pour jelly quickly into hot glasses. Cover at once with 1/8 inch hot paraffin. Add lids. Store in cool, dry place. Makes 5 (6 oz.) glasses.
