SQUASH CASSEROLE 
1 lb. yellow squash
1 med. onion, chopped
1 stick butter
1/2 tsp. sugar
10 Saltine crackers, crumbled
2 eggs
1/2 c. milk
1 c. Cheddar cheese, cut into bite size pieces
Salt and pepper

Cook squash and onion in salted water until tender, drain. Add one stick butter. Mash squash and onions with butter; add the crumbled Saltine crackers, eggs, milk, sugar, salt and pepper. Mix well. Add cheese. Pour into buttered casserole. Cook in oven at 300 degrees for one hour or 350 degrees for one half hour. Add 1/4 cup cracker crumbs and some pats of butter to top of casserole and allow to remain in oven until crumbs are browned. Serves 6 or more.
