CHILI RELLENO CASSEROLE 
3 sm. cans whole chiles, seeded
2 c. cheddar cheese, grated
2 c. Jack cheese, grated
4 eggs
2/3 c. evaporated milk
2 tbsp. flour
1 lb. ground beef, cooked and drained
8 oz. can tomato sauce
Salt and pepper to taste

Butter rectangular baking dish. Flatten chiles and line bottom of dish with 1/2 of the chiles. Spread 1 cup each cheddar and Jack on top plus 1/2 of the ground beef. Repeat.

Beat eggs, milk, flour, salt, and pepper together. Pour over mixture in baking dish. Bake, uncovered, 35 minutes in 350 degree oven. Cover entire surface with tomato sauce; bake 15 minutes longer. Serves 6-8.

Is even better after chilled. Heat and serve.
