ESTHER'S CHILI BEANS | |
Brown 1 pound hamburger with 1 chopped onion and 1 or 2 cloves garlic, crushed, some chopped green pepper if you have it. Drain the hamburger. Add: 1 tsp. salt 1 or 2 tbsp. chili powder 1 tsp. cumin A generous sprinkling of black pepper A little oregano, if you have it 1 lg. can tomatoes Leftover pinto beans, if you have any I guess you could buy a can of pinto beans but we always have a pot of beans one day and chili the next day. Cover and simmer a while. Serve with flour tortillas, crackers and butter or corn bread. MY FAVORITE CORN BREAD: Heat oven to 425 degrees. Melt 2 tablespoons butter, butter or shortening in an iron skillet in the oven as it heats. Mix: 3/4 c. cornmeal 1 c. flour 1/3 c. sugar 3 tsp. baking powder 3/4 tsp. salt 1 c. milk 1 egg, well beaten 2 tbsp. melted butter or shortening which you have already melted in the oven Mix all this together in a bowl and pour into the iron skillet you have already melted the butter in. Return to the oven and bake at 425 degrees for 20 minutes. Great with a pot of beans or chili. |
