HERBED ZUCCHINI STUFFED WITH
SPICY TOMATOES
 
3 med. zucchini
3 med. tomatoes, peeled and diced
1 tbsp. finely chopped onion
1 tbsp. fresh oregano
2 cloves fresh garlic, crushed
2 chopped jalapenos
1 tbsp. chopped basil

Cut the zucchini into halves, lengthwise, and scoop out the middle part. Blanch the zucchini and set aside.

In a skillet cook the tomatoes, onions, garlic, jalapeno and the herbs for 10 minutes. Stuff the zucchini with the cooked tomato mixture. Place the zucchini in a preheated 450 degree oven for 10 minutes and serve.
