BLUEBERRY COBBLER 
2 c. water packed blueberries
1/4 tsp. lemon juice
1/8 tsp. almond extract
1/2 tsp. arrowroot powder
2/3 c. juice from blueberries
1/2 c. flour, sifted
1/8 tsp. salt
3/4 tsp. baking powder
1 tbsp. butter
1 egg
2 tbsp. milk
12 sugar substitutes

Preheat oven to 425 degrees using shallow pan. Place blueberries in the pan. stir in lemon juice, extract, arrowroot and 2/3 cup berry juice and 9 sugar substitutes. Mix in a small bowl flour, salt, baking powder, cutting in butter until mixture is like coarse meal.

Mix in a small bowl egg, milk, and rest of sugar substitutes. stir together flour mixture into egg mixture and mix well and spoon onto fruit; bake until brown 25-30 minutes. Serve. Yields 8 servings.
