FRUIT PARFAIT PIE 
1 pie crust, baked and cooled or ready made from store
1 (10 oz.) pkg. frozen strawberries or raspberries, partially thawed
1/2 c. sugar
1 unbeaten egg white
1/2 c. whipping cream or 1 (8 oz.) whipped topping
1 tsp. lemon juice; optional

Put fruit, sugar, egg white, and lemon juice in large bowl and put electric mixer at high speed. Beat until soft mounds form when beater is raised. Fold the whipped cream or topping into fruit mixture by hand. Spoon into baked pie shell. Freeze. Take out about 1/2 hour before serving.

This is good any time of the year an can be made ahead of time.
