STUFFED TURKEY LOAF 
2 lbs. fresh ground turkey
1/2 c. chopped onion
3/4 c. chopped celery
2 tsp. oil
3 c. prepared stuffing mix
2 eggs, slightly beaten
1/2 c. water
1/2 c. tomato juice

Heat the oil in nonstick skillet and saute the onion and celery. When they are brown, add them to the stuffing mix, along with the eggs and 1/2 cup water. Add half of the stuffing to the ground turkey, mixing well. Pat half the turkey mixture into a 2-quart loaf pan (4 1/2 x 8 1/2 x 3 inches). Spread the remaining stuffing mixture on top and then put on the rest of the turkey. Pour tomato juice over the loaf and bake it at 350 degrees for 1 1/2 hours. 8 to 10 servings.
