VANILLA CREAM PIES 
Baked 8 inch crust

Mix: 3 tbsp. flour 1 tbsp. cornstarch 1/4 tsp. salt 1 1/2 c. milk 3 egg yolks, slightly beaten 1 tbsp. butter 1 tsp. vanilla

JAM MERINGUE TOPPING:

Add 1/4 teaspoon salt to 3 egg whites; beat until frothy. Stir in 1/4 cup fruit jam until smooth, then add gradually a few drops of red food coloring until brown.

For Butterscotch Cream Pie: Substitute 3/4 cup brown sugar for granulated sugar, increase butter to 2 tablespoons, otherwise same as above for vanilla.
