JALAPENO CORN BREAD 
3 c. cornbread mix
2 1/2 c.milk
1/2 c. salad oil
3 beaten eggs
1 lg. onion, grated
1 c. canned cream style corn
1 1/2 c. Colby cheese, grated
1/2 c. jalapeno peppers (I use the ones in a jar)

Combine all ingredients; mix well. Pour into a greased 13 x 9 inch pan. Bake at 400 degrees for about 45 minutes, or longer. This is a very moist bread. Serve with French Market Bean Soup or any bean dish. Serves 6 to 8.
