RAISIN OATMEAL COOKIES 
2/3 c. butter, softened
1/2 c. packed brown sugar
6 tbsp. sugar
2 eggs
1 tsp. vanilla
1 1/2 c. uncooked rolled oats
1 c. whole wheat or all-purpose flour
3/4 tsp. baking soda
1/2 tsp. salt
1 c. raisins
1 c. shredded or grated carrot

Cream butter, sugars, eggs and vanilla. Beat 2 minutes, until fluffy. Combine dry ingredients. Add to first mixture and beat well. Stir in raisins and carrots.

Drop by rounded teaspoonfuls 2 inches apart onto greased baking sheets. Bake 10-12 minutes in 350 degree oven. Yield 3 dozen.
