OATMEAL COOKIES 
3/4 c. sweet butter, softened
2/3 c. honey
2 eggs
2 tsp. pure vanilla
1/2 tsp. salt (optional)
1 c. whole wheat flour or oat flour
2 tsp. baking powder
3 c. uncooked rolled oats
1/2 c. chopped walnuts
1/2 c. shredded unsweetened coconut
1/2 c. carob chips

Preheat oven to 325 degrees. Grease a baking sheet. In a large bowl cream together the butter, honey, eggs, and vanilla. In a separate bowl stir together the salt, flour, baking powder, and oats. Combine the dry ingredients with the creamed mixture. Add the nuts and coconut, and mix together thoroughly. Drop by rounded teaspoonfuls onto the baking sheet. Bake for 10 minutes. Makes about 3-4 dozen cookies.
