CAJUN MEATLOAF | |
This is very spicy but very good. Combine seasoning: 1 tbsp. salt 1 tsp. cayenne (less if you don't want it very spicy) 1 tsp. black pepper 1/2 tsp. nutmeg 1/2 tsp. white pepper 1/2 tsp. cumin Saute finely chopped veggies in 4 tablespoons butter: 1/2 c. celery 1/2 c. bell pepper 1/4 c. green onion 2 tsp. garlic Add 1 tablespoon Tabasco and 1 tablespoon Worcestershire sauce. Saute for about 5 minutes until mix starts to stick. Stir in: 1/2 c. evaporated milk Cook for 2 minutes; cool. Add to: 1/2 lb. ground pork 2 eggs, lightly beaten 1 c. fine dry bread crumbs Veggie mixture (remove whole bay leaves) Mix thoroughly. Shape into loaf 1 1/2 inches high, 6 inches wide, 12 inches long. Bake at 350 degrees for 25 minutes, then turn oven up to 400 degrees. Cook 35 minutes longer. |
