CREME DE MENTHE CHEESECAKE 
1 1/2 c. crushed graham crackers
1 tsp. cinnamon
1/3 c. melted butter

FILLING:

3 oz. dark chocolate
3 eggs
2/3 c. sugar
1/2 lb. cream cheese
1 c. cream
2 1/2 tbsp. creme de menthe
5 tbsp. plain flour
1/8 tsp. baking soda
1/8 tsp. salt
Whipped cream
Grated chocolate

1. Mix together the crushed graham crackers, cinnamon and melted butter. Firmly press on the bottom and sides of an 8 inch springform pan. Chill until ready to use.

2. Melt the chocolate in a small bowl over hot water.

3. Beat together the eggs and sugar until thick and light yellow colored.

4. Soften the cream cheese and beat with the cream until smooth.

5. Add the melted chocolate to the cream cheese mixture and stir until well blended.

6. Add the egg mixture to the chocolate mixture with the creme de menthe. Mix gently but thoroughly.

7. Sift together the flour, baking soda and salt and mix into the chocolate mixture.

8. Pour into the prepared crust and bake in a 300 degree oven for about 1 hour. Turn off the heat and allow the cake to cool in the oven with the door open.

9. Serve topped with whipped cream and grated chocolate. Serves 8.
