VANILLA CARAMELS | |
1 c. granulated sugar 1 c. white Karo 1/4 c. butter (1/2 stick) 1/8 tsp. salt 1 c. cream (half and half) 1 tsp. vanilla 1/2 c. fine cut pecans Combine all ingredients but vanilla nd nuts in a heavy saucepan. Boil over medium heat, stirring constantly, to 250 degrees, or test for chewiness by taking a small amount of mixture in a spoon and dipping it in cold water until cool and then taking it into the mouth. Stir in vanilla and nuts and turn out in 9 x 5 x 3 inch greased pan. Cut waxed paper into 5 inch squares and lay out on table. When candy is cool, cut in strips of 1 inch wide and snip off 1 inch squares and wrap. Makes about 1 pound. |
