TURKEY SAUSAGE LASAGNA | |
1 lb. ground turkey sausage 1/2 c. chopped onion 2 cans tomato paste 1 can tomato sauce 1 tsp. basil 1/2 tsp. oregano 1 clove garlic minced Salt and pepper to taste 1 (10 oz.) pkg. frozen chopped spinach thawed and drained 16 oz. low fat cottage cheese 1/2 lb. lasagna noodles 6 oz. skim milk mozzarella grated Thaw turkey sausage. In a nonstick skillet, saute sausage with onion until onion is soft and meat is browned. Add tomato sauce, basil, oregano, garlic, salt and pepper to meat mixture. Combine spinach with cottage cheese. Cook noodles in boiling water until tender; drain. In lightly oiled 9x13 inch baking dish, arrange layers as follows: 1/2 of cooked noodles, 1/2 of spinach mixture, 1/2 of meat mixture, 1/2 of grated mozzarella. Repeat. Bake lasagna in 375 degrees oven for 15 to 20 minutes or until heated through. |
