ITALIAN TURKEY SAUSAGE KEBABS | |
1 1/2 lbs. Italian seasoned turkey sausage (mild or hot) Box of cherry tomatoes, washed 1 lg. green pepper, cut in 1 1/2 inch sqs. 1 lg. red onion, cut in eighths 10 fresh basil leaves, minced (or 1 tsp. dried) 3 sprigs fresh rosemary, crumbled (or 1 tsp. dried) 1 clove garlic, minced 1/2 tsp. fresh ground black pepper 2 tbsp. olive oil 1/2 c. low-sodium chicken broth 3 tbsp. red wine vinegar Partially cook the sausage (it will complete cooking on the skewers with the vegetables). Prick and place sausage on microwave-safe plate. Cover loosely with plastic wrap and microwave on high 4 minutes or place sausage in skillet with 1/2 inch of water; bring to a boil and simmer about 8 minutes. Let sausage cool until it can be handled, then cut each one into thirds. Alternate sausage, tomatoes, green peppers, and onions on skewers. Combine herbs, garlic, pepper, oil, broth, and red wine vinegar. Pour over skewers in shallow dish. Marinate 30 minutes. Broil or grill 8-10 minutes, basting frequently, until browned and vegetables are done. Serve with polenta or yellow rice. Serves 4. |
