CP'S LIGHT MASHED POTATOES 
Very creamy and healthy!

6 or 7 medium Idaho russet potatoes
2 tbsp. butter
half & half, as needed (I use fat-free)
salt and pepper, to taste
chopped chives, for garnish

Peel and boil potatoes until fork tender. Remove from boiling water with slotted spoon into mixing bowl.

Heat butter in microwave for 15 seconds until melted. Add to potatoes with salt and pepper. Blend with mixer until most lumps are removed. Add half & half until desired consistency. Snip chives if desired. Enjoy!
