EGGPLANT PARMESAN 
1 lg. eggplant
2 eggs, beaten
1 c. Italian style bread crumbs
Salt & pepper to taste
1 qt. spaghetti sauce
1 pkg. shredded Mozzarella cheese
Oil
Romano grated cheese

Thinly slice eggplant. Dip in egg, then into bread crumbs. Fry eggplant in oil (approximately 1 minute). Place a layer of sauce on bottom of baking pan. Layer eggplant slices, grated cheese, sauce and Mozzarella. Bake in 350 degree oven for 45 minutes.
