LONDON BROIL MARINATED IN
TEQUILA AND LIME
 
1 high-quality London Broil steak
1/2 c. tequila
3 tbsp. Rose's lime juice
2 tbsp. olive oil
1 tsp. orange peel
1 tsp. red pepper flakes
3 med. onions, thinly sliced
1 tbsp. butter
1/2 tsp. salt

Trim meat of any fat. Cut 1/8 inch deep diamond pattern into both sides of beef. Place meat in glass dish. Combine tequila, lime juice, oil, orange peel and pepper flakes. Pour over beef. Marinate 2 hours, turning meat over at least once. Cook and stir onions and salt in butter until tender (approximately 20 to 30 minutes). Set aside. Grill meat 6 inches from coals on medium heat for about 30 minutes (medium rare) basting with marinade and turning frequently. Slice beef across the grain at a slanted angle. Serve with onions.
