CARROT CAKE WITH CREAM CHEESE
FROSTING
 
CAKE:

2 c. sugar
1 1/2 c. cooking oil
4 eggs
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
3 c. shredded carrots
1 c. chopped nuts

Beat sugar and oil; add eggs one at a time. Then add dry ingredients; beat. Then add carrots and nuts; beat. Pour into 9x13 pan. Bake at 300 degrees for 1 1/4 hours.

FROSTING:

1 box confectioners sugar
8 oz. cream cheese
1 stick butter
1 tsp. vanilla

Mix all ingredients together. Beat until smooth. Spread on top of cake.
