APPLESAUCE OATMEAL MUFFINS 
1 1/2 c. oats (old-fashioned or quick)
1 1/4 c. flour
3/4 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
1 c. unsweetened applesauce
1/2 c. skim milk
1/2 c. brown sugar
3 tbsp. vegetable oil
1 egg white

TOPPING:

1/4 c. oats
1 tbsp. brown sugar
1 tbsp. melted butter
1/8 tsp. cinnamon

Heat oven to 400 degrees. Line 12 muffin cups with paper. Combine oats, flour, cinnamon, baking powder and soda. Add applesauce, milk, brown sugar, oil and egg white; mix just until dry ingredients are moistened. Fill cups, sprinkle on topping. Bake 20-22 minutes.
