APPLESAUCE BRAN MUFFINS 
2 egg whites
2 tbsp. safflower oil and 2 tbsp. apple juice
2 1/2 c. unsweetened apple sauce
2 c. whole wheat pastry flour
1/2 c. oatmeal
1/2 c. bran
1 1/2 tsp. baking soda
4 tsp. baking powder
1 tsp. each nutmeg and cinnamon
1 1/2 c. raisins

Beat together egg whites, oil, juice and applesauce. Add flour, oats, bran, baking soda, baking powder, and spices. Stir in raisins. Spoon batter into paper lined muffin tins. Bake at 375 degrees for 20 minutes or until toothpick inserted in muffin comes out clean. Makes about 2 dozen muffins.
