APPLESAUCE-OATMEAL MUFFINS 
1/2 c. butter
3/4 c. brown sugar, lightly packed
1 egg
1/2 tsp. cinnamon
1 c. flour
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
3/4 c. applesauce
1 c. quick cooking oats
1/2 c. chopped nuts (optional)

Cream butter; gradually add brown sugar and cream until light and fluffy. Add egg and beat well.

Mix well next 5 ingredients and add alternately with applesauce to creamed mixture, stirring well. Add next 2 ingredients and mix well. Spoon into 12 well-buttered muffin cups. Bake in 350 degree oven for 25-30 minutes or until done. Cool on rack. Approximately 12 muffins.
