CHINESE FRIED RICE 
1 c. bean sprouts
1 tbsp. vegetable oil
2 eggs, slightly beaten
1 tbsp. vegetable oil
3 tbsp. vegetable oil
3 c. white rice, cooked
2 tbsp. soy sauce
1 c. shrimp, cooked or chicken, cooked or barbecued pork
2 green onions, chopped

Rinse beans sprouts in cold water; drain. Heat wok until very hot; add 1 tablespoon oil and rotate wok to coat sides. Add eggs; cook and stir until eggs are thickened, but still moist. Remove from wok. Add 1 tablespoons oil to hot wok. Stir fry bean sprouts, 1 to 2 minutes. Remove and place in strainer. Add 2 tablespoons oil again to wok. Stir fry rice for 1 to 2 minutes. Fry green onions in with rice for 30 seconds. Add soy sauce. Stir in shrimp or meat, bean sprouts and eggs; stir fry for 1 minute and serve.

This was so simple and easy to make and it tasted awesome. I added water chestnuts and fresh onion chunks. The only thing that I will do different next time is use cold rice not fresh made (it was a little mushy). It went great with my homemade General Tso Chicken.
