CHINESE FRIED RICE 
6 c. cooked white rice
4 eggs
2 stalks celery
1 green pepper
6 fresh mushrooms
1 white onion
1 bunch green onion
1/2 c. soy sauce
3 tbsp. oil

1. Chop all vegetables finely.

2. Heat oil in pan on medium high heat.

3. Add vegetables and stir rapidly until onions are transparent appearing.

4. Add eggs and stir rapidly until they are cooked and break up into pieces.

5. Add rice and continue stirring.

6. Slowly drip soy sauce into rice while stirring.

7. Continue stirring until rice begins to appear dry. Serves 8 persons.
