CHINESE STYLE FRIED RICE 
3 tbsp. butter
1 egg, beaten
1/3 c. chopped onion
1/3 c. water
2 - 3 tbsp. soy sauce
1 2/3 c. cooked rice
Celery and bell peppers
Left - over cooked chicken or pork, cut into bite size pieces

Cook egg in butter in 10 inch skillet just until set. Add onions, chicken, rice, celery and peppers. Cook over medium heat until lightly browned, stirring occasionally, about 5 to 10 minutes. Combine water and soy sauce. Stir into rice mixture and cook 2 minutes more.
