MEXICAN SKILLET HASH 
1 lb. ground beef
1 med. onion, chopped
1 med. green pepper, chopped
1 (29 oz.) can tomatoes
1 c. long grain rice
1 3/4 tsp. chili powder
2 1/2 tsp. salt
1/8 tsp. pepper
1/2 c. shredded cheese

Brown ground beef, onion and pepper; drain. Stir in tomatoes, rice, chili powder, salt and pepper. Bake at 350 degrees until rice is done. Sprinkle cheese on top; let melt.
