CHILAQUILES (Mexican) | |
5 flour tortillas, cut in sm. sq. 5 eggs, beaten 3 slices American cheese 1/2 green pepper, chopped 1 sm./med. onion, chopped 1 med. tomato, chopped 2-3 tbsp. oil for skillet Vary amounts of all ingredients according to taste and stock in kitchen pantry! Fry tortilla in hot oil until very light brown. Add onion and green pepper, stirring constantly and adding oil if necessary, fry just until beginning to cook (1-2 minutes). Add tomato and stir. Add beaten eggs and stir, scrambling mixture over medium heat. Just before eggs are fully cooked add cheese, turn into pieces and cook until cheese is melted. Stir and serve with warm tortillas on the side and Spanish rice if desired. |
