MEXICAN SKILLET SUPPER 
1 lb. ground turkey
1/2 c. green pepper
1/2 c. diced onions
1 sm. can mushrooms
1/4 c. carrots
1/4 c. celery
1/2 c. rice
2 c. tomato juice (or more)
Chili powder
Salt and pepper to taste

Brown turkey meat in skillet. Add 2 cups or more of tomato juice, chili powder, salt and pepper to taste and 1/2 cup of rice along with the other vegetables and simmer 20 minutes or until done.
