SKILLET GRAVY 
3 tbsp. meat drippings
3 tbsp. flour
2 c. liquid
Salt to taste
Pepper to taste

Shake or spoon flour into drippings in skillet. Blend over low heat until smooth and browned. Gradually add liquid. Cook, stirring constantly, until thickened. Season with salt and pepper.

Tip: Flour and drippings may be decreased to 2 tablespoons for thin gravy; increased to 4 tablespoons for thick gravy.

Milk Gravy: Use 2 cups milk for liquid. Milk gravy is especially good with chicken.
