EASY HOMEMADE POWERBARS 
1 cup instant oatmeal, uncooked
1/2 cup peanut butter (crunchy or smooth)
1/3 cup chocolate chips
1/4 cup coconut (optional)
3 tbsp. honey
1 tsp. vanilla

Melt peanut butter. Stir all ingredients in, adding chocolate chips last. Knead into ball (should be like dough; add flour if too sticky).

Roll into log and cover in saran wrap. Freeze for 1 hour (at least). Slice up into medallions and serve.

I like them with bananas!
