VELVET ZUCCHINI SOUP 
2 med. zucchini, cut up
2 tbsp. onion, finely chopped
1 tsp. paprika
14-1/2 oz. can chicken broth
2 tbsp. butter
1 clove garlic, pressed
1/2 c. Half & Half, or whole milk

Saute onion, add zucchini, almost cover with water. Simmer for 15 minutes, covered. Drain slightly. Add garlic and paprika. Put into blender and blend until smooth. Add Half & Half or milk and chicken broth. Serve hot or cold.
