YORKSHIRE PUDDING 
(continued with roast prime rib of beef)

2 eggs
1/2 c. all purpose flour
3/4 c. milk
1/2 tsp. salt
1/8 tsp. pepper

Beat eggs and milk in small mixer bowl until smooth; add flour, salt, nutmeg and pepper; beating until well blended. Let mixture stand for 30 minutes. Pour 2 teaspoons of reserved pan drippings into each of 8 muffin pans; heat in a preheated 400 degree oven for 2 minutes. Fill muffin cups 3/4 full with batter. Bake for 20 minutes or until golden brown. serve with roast and reserved sauce.
