ENGLISH YORKSHIRE PUDDING 
3 lg. eggs
2 c. milk
1 3/4 c. self-rising flour
Pinch of salt

Blend together eggs and milk. Add flour and salt. Place blender with mixture in it into refrigerator for at least one hour. Just prior to baking put 1 teaspoon of roast beef dripping (oil can be substituted) into each cup of a cupcake pan and place in hot oven (at least 450 degrees) until it begins to smoke. Take blender of mixture and pour into each cup, (fill about 1/2 way). Return to hot oven and bake for at least 15 minutes (puddings are done when they have risen above side of cup and are crispy and brown on top). These are best eaten with oven-roasted beef and gravy smothered on top. They can also be served with raspberry vinegar as a dessert.
