GREAT PUMPKIN COOKIES 
SINGLE RECIPE:

2 c. flour
1 c. quick oats, uncooked
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 c. softened butter
1 c. packed brown sugar
1 c. granulated sugar
1 egg
1 tsp. vanilla extract
1 c. pumpkin
Walnuts, raisins or chocolate chips, etc. as desired

DOUBLE RECIPE:

4 c. flour
2 c. oats
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 c. softened butter
2 c. packed brown sugar
2 c. granulated sugar
2 eggs
2 tsp. vanilla extract
2 c. pumpkin
Walnuts, raisins or chocolate chips, etc. as desired

I usually use 1/2 cup shortening and 1/2 cup butter. This makes the cookies firmer and less likely to spread. Combine flour, oats, soda, cinnamon and salt. Cream butter, gradually add sugars. Add egg and vanilla. Mix well; alternately add dry ingredients and pumpkin. Add nuts, raisins and chocolate morsels as desired. Bake at 350 degrees for 10 minutes.
