EASY OATMEAL COOKIES 
1 c. sugar
1 c. butter
1 c. flour
2 c. Quick Oats
1 tsp. baking soda (sifted with flour)

Preheat oven to 350°F.

Mix with hands -- form small balls and flatten on ungreased pan.

Bake for 8-12 minutes (depends on size of cookies made).

Variations: add 1 tsp. vanilla, applesauce, mashed bananas, cinnamon, raisins, cranberries, chopped nuts, etc. Agave syrup or honey can be substituted for sugar, if desired.

I baked these oatmeal cookies with my Daughter (16) and they really flattened! Now, the pan we used is so black it needs to be trashed, but 'Dad' has to do that! Ha! So... could that be why they aLmost burned? My Daughter insisted we don't flatten them! (like drop ones she said!) So I let her!

Even easier, I had instant oatmeal in several flavors. Used 6 packs, 1 cup of self-rising flour, 3/4 cup margarine, vanilla and cinnamon, 1 egg (2 makes it too wet), dropped them right from the bowl.. 5 min prep, so easy so good!

I pack my kids lunch. They absolutely LOVED these cookies. Added the 2 eggs, a half cup of flour, and some cinnamon. It Was very hard to keep the hubbs out of them. Lol. Great for school lunches or after school snack. Will keep this recipe!

I prepared some oatmeal cookies with the recipe, but I used honey rather than sugar and added cinnamon. DELICIOUS!!!! I used flour when forming the cookies because they were a little gooey (sticky). Bake them for exactly 10 minutes. This is an amazing recipe. I will try this again but I wil add some raisins and nuts next time.
