EASY OATMEAL COOKIES 
1 c. sugar
1 c. butter
1 c. flour
2 c. Quick Oats
1 tsp. baking soda (sifted with flour)

Preheat oven to 350°F.

Mix with hands -- form small balls and flatten on ungreased pan.

Bake for 8-12 minutes (depends on size of cookies made).

Variations: add 1 tsp. vanilla, applesauce, mashed bananas, cinnamon, raisins, cranberries, chopped nuts, etc. Agave syrup or honey can be substituted for sugar, if desired.

Added four packs of Maple & Brown Sugar instant Oatmeal. We did not have any brown sugar. Insead of butter I put pumpkin butter in the it. Still was hard I should have put an egg in it to solfen it up.

I made this recipe with my grandma and I put less of everything except flour. I put one egg, a skimpy cup of sugar (not full), 1 1/2 cup oats, 1 stick of butter, a couple spoonfuls of apple sauce, 1/2 cup raisins, a spoonful of baking soda dissolved in lemon juice (no I didn't measure the soda), 2 caps worth vanilla. That's it! Our oven is a little weird so we had to flip the cookies over so the top could bake as well and the bottoms wouldn't burn. We also changed the temperatures so they wouldn't burn. In the end they turned out really well!

I added one egg, olive oil and butter, water then flattened with a wet spoon. They are nice and soft. Easy, great recipe!!

Yes, as per above posters
1.) add 2 eggs
2.) add 1/2 cup flour

My additions-
1.) add 1/2 cup milk
2.) add 1 cup raisins
3.) add a small amount of salt, a few dashes
4.) use baking powder (about a teaspoon) instead of baking soda if you have it, I think it does better myself
5.) add a teaspoon of vanilla
7.) I'm also adding 1 banana this time, I hope it tastes great, I think it will!
8.) I wish I had some finely chopped nuts like pecans or walnuts- that would be awesome! Alas / I don't right now though :-/. 8-D
