EASY OATMEAL COOKIES 
1 c. sugar
1 c. butter
1 c. flour
2 c. Quick Oats
1 tsp. baking soda (sifted with flour)

Preheat oven to 350°F.

Mix with hands -- form small balls and flatten on ungreased pan.

Bake for 8-12 minutes (depends on size of cookies made).

Variations: add 1 tsp. vanilla, applesauce, mashed bananas, cinnamon, raisins, cranberries, chopped nuts, etc. Agave syrup or honey can be substituted for sugar, if desired.

Just made the first round and my mother loves them. Added the 2 eggs, tsp of vanilla and cinnamon and 2/3 cup flour. And I half the white sugar with brown sugar. Mmmm. I like them and I don't like oatmeal cookies!! Though, I belended the butter and sugar with an egg beater and then added the vanilla and one egg at time. After I added the flour, baking soda and cinnamon, blended. Then I stirred in the oats. Had to spoon the dough onto cookie sheets. I used parchment paper to line the cookie sheets.

I know my family new oatmeal cookies recipe.

I just did this with my nephew and popped them into the oven. Now we are waiting 10 mins. First time either of us make oatmeal cookies. The process alone is really fun. Hope they taste good. We added cinnamon, egg and vanilla to spice it up. And we wil drizzle them with honey once done. :P

So, like everyone said I added 2 eggs and a 1 tsp of vanilla. I used 1 1/4 cups of self-rising flour inside of all- purpose. The batter came out a bit sticky so I was worried, because i never made oatmeal cookies before. I put the in the oven and it took about 15-20 to cook. I suggest you add cinnamon or/and nutmeg to give it some taste. Since the I had already made them, I had sprinkled some nutmeg over the cookies( i had no more cinnamon). This is a recipe I would use again!

Incredibly easy. Just now seeing the comments about eggs. However the BF is extremely egg intolerant (insert awful bathroom noises) never the less I added 1 cup white chocolate chips and 1 cup dried cranberries, and the cookies turned out amazing. The cookie dough is quite dry so size your cookies appropriately and about 10-12 minutes on the bake time and these are amazing. (also an easy recipe to veganize!)

This recipe is just awesome..reviewing the comments proved very helpful..
I first blended sugar and butter till fluffy and added just an egg and addons such as choco powder , vanilla , mashed banana ,and crushed almonds..also I substituted half tsp baking soda with baking powder and also added melted chocolate after second batch..also I baked half the batter in mini silicon cups which turned out very moist like muffins at 15mins and remaining batter into cookies at 12 mins...one of the best and easy recipe for oatmeal cookies..everyone in my home just love it..
