EASY OATMEAL COOKIES 
1 c. sugar
1 c. butter
1 c. flour
2 c. Quick Oats
1 tsp. baking soda (sifted with flour)

Preheat oven to 350°F.

Mix with hands -- form small balls and flatten on ungreased pan.

Bake for 8-12 minutes (depends on size of cookies made).

Variations: add 1 tsp. vanilla, applesauce, mashed bananas, cinnamon, raisins, cranberries, chopped nuts, etc. Agave syrup or honey can be substituted for sugar, if desired.

Great late night snack recipe. Took about 4 minutes to get in the oven, about 14 minutes to bake. Add additional oats and flour if humid. Add raisins and you have a somewhat healthful cookie.

These cookies are great, easy recipe. I think they great with or without two eggs, with them they are softer and chewier and without them they are like shortbread cookies. 10 to 12 minutes is a good baking time.

Adding cinnamon, nutmeg, shredded carrots, vanilla extract and half the amount of butter made it really tasty. :-) Baking the cookies at 350 degrees for 17-18 minutes didn't make them hard or brittle. They were chewy and fluffy even without adding the eggs.

Next time I'll add raisins. Thank you for sharing this wonderful recipe. :-)

My 12 yr. old granddaughter just baked these delicious cookies. She was feeling creative so she added unsweetened applesauce, peanut butter, natural unsweetened cocoa powder, vanilla and 2 eggs to the original recipe. We baked and ate! Wonderful!!

I made this with mostly organic ingredients including raw turbinado sugar and spelt flour, substituted 1/2 cup applesauce for half the butter and added the 2 eggs plus 1 tsp of vanilla. Soooooo delicious!

I added to this original recipe what the first ten folks recommended and these turned out great! I added two bananas, 1/2 c peanut butter, 2 eggs, some cinnamon, little extra flour and I also added some pecans, a lot of pecans! These are great and I'm keeping this recipe!

I did the same, added 2 eggs, and instead of a full cup of butter, I put in some apple sauce. I also did 1/2 raw sugar and 1/2 brown sugar :) Tasty!

We added 3/4 of a cup of extra flour and 2 crushed bananas with 1/4 cup of honey and although kinda pasty when forming the balls, once you flatten slightly, not too much, they turn into very nice cookies. We found 11 minutes was perfect at 350°F degrees. We opted to leave out the eggs but we did add the cinnamon. Very nice recipe.

Tastes great! I used two eggs, half the butter and added yoghurt instead. Also added vanilla and some shredded coconut. They turned out a bit crunchy on the edges and soft and chewy in the middle.

With a lot of modifying, this recipe was perfect! I wanted something really healthy to eat, so I substituted the butter with homemade applesauce, used whole wheat flour, and olnly used less than half the amount of sugested sugar. They turned out perfect - plump and moist (they only needed to stay in tho oven for a few minutes), and a super healthy little snack. (I also added in a pinch of cinimon to go with the apples!) UMMMMMMMMM........
