SQUASH CASSEROLE 
3-4 c. squash, cooked & drained
1 can cream of mushroom soup
1 c. grated cheese
1 c. Ritz cracker crumbs
Salt & pepper to taste
1 onion, chopped fine or instant flakes
2 eggs, beaten

Preheat oven to 350 degrees. Mix squash, soup, onions, cheese, eggs and cracker crumbs. Pour in a casserole dish. Top with additional cracker crumbs and dot with butter. Bake 30 minutes or until golden brown.
