SQUASH CASSEROLE 
4 c. cooked squash, drained
2 eggs, beaten
Salt and pepper to taste
1 can mushroom soup
1 1/2 c. grated cheese
1/4 c. butter, melted
Ritz crackers

Combine eggs, butter, mushroom soup, 3/4 cup of cheese. Add salt and pepper to taste after adding squash. Pour in cooking dish. Sprinkle rest of cheese on top of mixture. Crush Ritz crackers and put on top of cheese. Bake at 350 degrees for 40-45 minutes, uncovered.
